You'll want to seal the holes with epoxy after you drill them but you were probably going to do that anyways. Your waterline may be different since you added the deep vee. On the Geronimo it's the same as the setup level.

When I had the jon boat, I could not see the empty trailer if it was lined up straight behind the truck. So I generally preferred to back down the ramps in a slight curve if possible so I could keep my eye on the drivers side wheel.

I think you could run into a good bit of trouble gluing to the chine first and letting that cure. Are you trying to finish the plywood bright (natural)?
