The books by Gerr are good. one is mentioned above. You get the gear ratio by figuring the size, weight, shape of the boat plus the engine HP installed. Your speed will be a function of HP vs weight. I've eat many barracuda. under 3' they taste just fine.
I eat bonita too, the clear meat on top of the back, makes good Hawaiian poke' also.

I used a bit of ash in my build, as well as white oak.
I like the ash.
as long as it is encapsulated, and treated properly, I could easily prefer it over white oak.
