Sounds like a good plan.

I would use fairing compound to fill the holes and fair the bottom though.It`s easy to apply and sand.
After that you can start with the glass. I would put the glass down dry and then epoxy it.

Took the ZIP out a couple of days ago with its new 25 Mercury 4 stroke. Still braking in the motor...but WoW !! what a machine. Starts up with a quick turn of the key. 3/4 inch overhang is good enough. I used a farriers file to knock it down once it was all glued in place.
You can level it pretty quick with those beefy files
