It's hard to beat epoxy.

I've used MAS before. But bear in mind if you don't varnish it will yellow on you. May or may not matter.

I'm curious about the choice of forgoing the fiberglass. I've built a couple stitch and glue kayaks and when the weave is filled the glass is virtually invisible.

Mind if I ask what motivated that decision?

I think it's possible. I almost did it, but liked the wood deck too much. Now I just have to figure out how to walk on a baby grand piano to use the swim deck. I will say that you need to take into consideration your fuel tank size and shape. I was going with a Moeller 25 gallon, but it was too tal...
