I used African Mahogany plywood for most of my Squirt, but ran out while finishing the rear decking. I used Okoume for the remaining decking and was really impressed. It weighs much less than the mahogany and cut easier as well. My next boat will be all Okoume plywood.

Spray rails help to deflect water and can act as a buffer from anything scratching up the sides of the boat, though they shouldn't be used purely as a defensive addition.
