Now onto the chines! I soaked them in my backyard hockey rink since it was a large swimming pool last week. They bent nicely and came in better than I thought they would. On frame 2 how should the chine mate to the notch? See the picture below. Notice the frame sitting proud of the chine just below the clamp. On the left hand side of the notch the chine is proud of the frame. How should this sit?

I would cut a bit more out of the frame so the chine is level then you fair the rest of the frame to suit

Now that I've fitted the chines I'm starting work on the sheers. What is done to the profile of the stem surface where the plywood meets the stem? Is that going to be faired into a triangular shape? If so would it be better to have the chine and sheer interface to the stem not come all the way to the edge of the stem?

I will post pictures today (hopefully) with completed frame!

Yes, the stem will be faired to a point or triangle as you said. So the chine should be mounted a little aft of the forward edge of the stem. The breasthook should help to basically automatically mount the sheer aft of the forward edge of the stem. Pic below should help even though its of a Zip instead of Squirt.
