Finding the right boat to build?

Ok, I know I have been jumping around from boat to boat. I want to build a boat for Lake Erie and the other Great Lakes. I have it down to three boats. The following boats: 27' Coastal Cruiser, 27' True Grit with Sedan, and the 24' Hercules. Here's the thing, I like all of the ways that they look, the only thing is I would like to make the cabin a little more custom to my standards. Mainly what I want is the following, Refrigerator, Stove, Sink, Toilet, Storage Room, Table with a couple of chairs, TV, and maybe a place to eat outside? I really like this guy's modified design if the True-Grit : http://www.egyptian.net/~raymacke/TG/TG01.html Now I know that the Hercules is 3' smaller, but would I be able to shrink some of this down, and would all three of these boats do good on the Great Lakes especially Lake Erie? Any help would be great! Thanks A Lot!
