1986 Melhart RESTORATION

Well its my first time on a forum and I have a million questions since Im a noob at restoring. I would like some input as to what i should do.
First of all I got this boat for FREE so it really doesnt matter if my plans are not something that can or should be done.
I gutted the whole boat , well at least about half way so far, but i didnt take the Cap off because I didnt know how and so what i did to get to the front of the boat , I cut the fiberglass on the driver and passanger side consoles. So now i have the cap still on the boat but I am trying to do some modifications once I am done with the stringers and floor.
Here are my two plans, and they both are for keeping this boat a fishing boat. 1st plan is to try to make it a walk around boat with a center console , and if thats not something that can or should be done than plan #2 is to try to make it a PILOTHOUSE type of boat.
The boat has a 3.0 Mercruiser inboard/outboard. Can someone tell me which of the two choices is the better one ? I really like the Pilothouse because of the wind and comfort it can bring , but i also like the idea of walking all the way around.
Anyways , Im not sure that anyone will read this but I hope i can get some input.

You didn't read the rules. You have to have 3 "approved" post. You now have them.

Well , the picture of the boat is a pic i found online because i dont have the original picture as i got the boat but the rest is what i started.

You can separate the top and bottom half of the boat. They are usually put together at the rub rail.
