I am considering making the following modifications.
changing the inside portion of the Monaco to the utility style
Making the front seat a 2/3 's seat and allowing a walk-thru
will this affect the structure strength?
How much are people moving their engines aft?

I believe the utility style is possible and I think others have done it. I think the engine has to stay pretty close to plan for it will effect the COB.

I have seen the utility design, I want to make it a walk thru with a 2/3 front seat, removing the front seat backing which runs from port to starboard

Torsioinally speaking removing the seat back middle portion will not make a significant difference. in a utility deign there is very little transverse support at the deck anyway. The deck carlings and deck strake provide the majority of your support. I would say you are okay to make the walk through as well

In relation to moving the engine back, you don't have a lot to play with anyhow. Where the prop shaft comes out is a governing point. Surprisingly I found with my boat with the fuel tank half full it performs the best when loaded from the front. That is, 3 across the front before anybody in the rear seat.
