new to forum, building "La Chatte," what glue for hull skin?

Hello all,
My name is Mark and I live in Englewood, CO (suburb of Denver).
I've been building the La Chatte car-toppable catamaran for the last year or so. Why the La Chatte? My family loves camping in our pop-up trailer and sailing, but I wasn't crazy about towing 2 trailers in tandem on our trips. Plus, we wanted a boat big enough to take several of us out at a time. The La Chatte fits this bill.
Things have gone quite well so far, and I am in the process of applying the skin to the first hull.
I am using 4 mm marine plywood, so it bends quite easily around the framework.
As far as gluing the skin to the frame goes, I think I will need to use epoxy because of the longer working time. I've used titebond III everywhere else, but it sets up too quickly to use on the hull skin.
Is there another waterproof glue that has a long work time that I could use instead of epoxy? I'm not opposed to using it and have used it before, I'm just wondering if there's a less messy alternative.
I'd appreciate any other tips from other la chatte builders as well.
