Cruising Dinghy

I am looking to build a cruising dinghy along the the lines of the Wayfarer or the Drascombe lugger. It needs to be seaworthy, stable and unsinkable. The length would be from 14 to 19 feet. It has to be light enough to row when there is little wind. Ability to carry two people for up to a month. . . and will be used for sleeping, eating. It needs to have watertight storage and it has to be beach-able.
All suggestions are appreciated. Speed is a consideration because I may eventually enter the Seattle to Alaska race.
