In my experience, the easiest epoxy to use is MAS with slow hardener. It dries clear with NO amine blush. I don't know of any other epoxy that is like that. There are lots of other high quality epoxy marine brands around including the Glen-L brands. For safety, my advice is to wear a respirator every time you apply epoxy and especially when sanding it. I have developed a slight epoxy allergy and I get a sore throat and my eyes get itchy. Others get some pretty significant skin rashes.

I would say epoxyng the sub deck ply is highly recommended, fiberglassing it a bit over the top and not all that necessary - then apply the fancy deck boards and finish that with epoxy and clear coat.

I put the cover boards on with thickened epoxy resin over the plywood substrate. Rather than clamp them in place, I countersunk and bored the screw holes for plugs. Cloth is not needed under the cover boards, but you could put cloth over them. Many builders do not use cloth above the waterline.
