The Italian sausages in marinara sauce was Johnsonville Mild Italians with Ragu Spagetti Sauce with sliced green peppers. We browned the sausages a bit on the grill for color and grill marks, placed them in the nesco, covered in them in the sauce, and slow cooked for about 7 hrs. I added the peppers about two hours before serving.

Southwest Bean & Chicken Soup (some call it Chicken Chili)
Spray the bottom of your crock pot lightly with PAM cooking spray.
Place 4 or 5 large, raw, boneless, skinless chicken breast halves in the bottom of the crock pot. Pour 2 large-sized glass jars of Randall’s Great Northern Beans (do not drain) over the chicken.
Add 2 cans of Ro-Tel tomatoes. (I used one can of Original and one can of Hot Ro-Tel. You can use whatever “heat” you desire and add some Tabasco sauce too if you wish.)
Cook on High setting for 5 hours. Fork out the chicken and cut it up in large chucks – it will continue to fall apart as you stir it back in with the beans. Continue cooking for another 30 minutes.

The food was great. There should be an admission charge just for the great food.
The chili, turkey, soup, sausages, salads, pancakes, low country boil, eggs and all were fantastic.
The gathering is like this eclectic street fair. You just walk up and down the dock and munch away.
I'd like the recipe for Bill's breakfast egg dish as well.
5 lbs. ground sausage (I usually use 3 hot and 2 mild) - cook and keep drippings
3-4 large onions & 3-4 bell peppers - chopped and saute' in some sausage drippings
8 or so Potatoes - cubed and fried in drippings (called home fries) - tip you can microwave for first 5-6 minutes then fry
8 dozen egges - scramble
Mix and serve
There are lots of variables to this...you can add garlic, spinach, broccoli, hot links, cheese...
In smaller batches you can combine everything after cooking the sausage/onion/taters and scramble the eggs with everything in the pan.

I told my wife we needed a three-car garage for my projects...she told me to ask her for permission next time before I buy a house. http://www.unitybuild.net
We would like to thank all the Glen L folks who welcomed us to this year's Gathering. It was a real treat for us to see all the Glen L boats. They were so beautiful, and unique in their own way. The great food and terrific people made it a fun weekend for us.

CORNBREAD SALAD
Cornbread
2 Boxes Jiffy Cornbread Mix (will need 2 eggs + 2/3 cups milk to make cornbread)
Veggies
!/2 cup each green and red bell pepper, diced
1/2 cup onion, diced
3 large tomatoes, diced
1 can pinto beans, drained and rinsed
2 cups whole kernal corn, drained
Prepare cornbread according to package directions, cool and crumble. In a large bowl, mix all veggies. In a small bowl, mix mayo, sour cream & ranch dressing mix. Using half of each, layer: cornbread, veggies, dressing. Top with half the bacon and cheese. Make second layer with remaining ingredients.
Somehow I missed eating that!! I remember seeing it and how good it looked, but I forgot and just didn't get back to get some. Darn!!! I hope you bring it again next year.
