Sweet 16 rudder

Hey folks, I need to fabricate a rudder for my Sweet 16 out of 1/4 inch SS, then weld it onto the rudder shaft. What variety of SS would you all recommend? 304, 316? Any advice recommended! Thanks.

In fresh water 304 will be fine, it will gray over time. In salt 316.

316 is the better choice, its a bit easier to weld as well.
