Went through our build photos and found a few of the transom knee in various states of completion. Unfortunately I don't have any shots of the back of the transom post bolt and per planking.

I don't think you'll have any issues with the carriage bolts/transom knee interfering with the engine mount. I went with the yamaha 70 as well and the hardware for the mount doesn't sit on the centerline, the bolt through on either side. I don't have a great picture of the inside unfortunately, but ...

I was able to get insurance from Hagerty back in March with no problems. I did put down "wood" for the hull material, and I don't think I mentioned fiberglass.

The next day we took her out for a shake down cruise on the intracoastal off Vero Beach with my wife, dog, brother, and SIL along. Does the trailer have a VIN on it? If so you may be able to track down the previous owner to get a bill of sale.

If there's no VIN, then I think it it will be somewhat straightforward to register it as a homebuilt trailer, but I'd probably call your local DMV first.
